This week I thought I'd go with a sweet pie. I've always enjoyed a good custard pie, so I figured that would be a good first sweet pie for the blog.

Chipotle Chicken
0 comments
This is the second Mexican inspired pie in a couple of weeks, and I guess it's because Mexican food often is made to be placed inside some sort of wrapper - a tortilla, taco, tamales etc. Mexican food is also delicious, so should be available in a pie.
This is a spicy chipotle chicken pie, with a few veges thrown in. It was pretty amazing, and tasted even better than I'd hoped.

Lamb Tagine Pie

A tagine is a Moroccan stew, usually a mixture of chicken or lamb (or goat if it's authentic Moroccan), root vegetables, fruit and spices like cumin and cinnamon. It's a delicious dish, and one that lends itself well to a pie form.

The Pulled Pork Pie

Pulled Pork (or Carolina Barbecued Pork, or whatever you want to call it) is a tasty dish on its own. But when you make it, you tend to end up with way too much smoky pork meat to deal with. So I thought I'd try putting the leftovers into pies. And you know what? It's awesome. Here's the recipe.

Mushroom, potato and red wine (a vege special)
This week I thought I'd give a little treat to my vegetarian friends out there. This actually started out as part of a twice-cooked duck recipe, but with the mushrooms cooked separately, then I forgot to reintegrate the 'shrooms with the duck, and decided to pie them up (as we say in the biz). Here's the result.

Chicken, Baby Leek and Kumara (Sweet Potato)
1 commentsChicken pies are pretty cool, right? And baby leek? That's a bit different. Throw in a kumara for some bonus sweetness? Why not. Well, that's this week's pie, so I hope you enjoy it my friends.
